Not only our paleo friends can enjoy these pancakes. Of course, some people may want to avoid all flour, not just almond flour. So this is the perfect recipe because there is no flour at all! Oh, and a huge bonus for people who avoid nuts or have allergies … this recipe is nut free!

Paleo Pancakes For The Win

Now one of the best parts is that you can bake those paleo pancakes and serve them later too. Sometimes it can be good to make an extra batch and freeze it another day. All you have to do later in the week is heat them up and voila! A few days later, it can be a great, healthy snack for the family.

Paleo banana pancakes recipe

It’s really a great recipe for delicious Banana Paleo waffles! We also have to keep in mind that they also use vanilla and cinnamon extract. You can always customize this recipe and add the spices that suit your needs. To be honest, bananas go well with almost anything.

Note: this recipe will work for one, but if you change it for more people just use the ratio. You will need 1.5 bananas for 2 eggs. Also try using ripe bananas with brown spots for this recipe.

Now you need to collect the following ingredients …

  • 1.5 large ripe bananas;
  • 2 eggs;
  • 1/2 teaspoon vanilla extract;
  • 1/4 teaspoon 1/2 teaspoon of ground cinnamon;
  • 1/8 c. 1/2 teaspoon of yeast;
  • Coconut oil / non-stick spray (depending on what you prefer to cook with)
  • Maple syrup; (Optional)
  • Fresh fruits; (Optional)

The total preparation time should be around ten minutes. Start by placing the eggs in a bowl and whisking them together. Then you want to have another bowl in which to lightly mash your bananas. You can use a fork. You can then add the beaten eggs, baking soda, cinnamon, and vanilla to the mashed bananas. Stir everything to combine.

Now you can bake the dough. Use only a spoon the size of two tablespoons for cooking. This will help you flip as larger pancakes will fall apart more easily. Set your pan on medium to low heat. Then cook each pancake until the bottom is firm. This takes a minute or two. Turn over with the spatula and cook for another 1 minute.

When you are ready to serve, how you serve is up to you. You can of course use butter if you are okay with dairy products and your paleo diet isn’t that strict. You might like maple syrup, honey, or even fresh fruit. Some people prefer raw maple syrup or you can even go crazy with jam. The possibilities are really endless.
