Bring the summer! We are ready. Why? Because we have the tastiest, freshest and healthiest strawberries and popsicles in our hands. Not really. Stop buying those sugar-filled popsicles when we have a healthy, natural option. Of course, that doesn’t harm these taste buds either. Thanks to Jessica Rosen, certified holistic health coach and president of Raw Generation, a delicious pre-made smoothie and juice company, we have the perfect recipe. Did we mention that you can have this smoothie ice cream recipe as a filling breakfast in the morning? Yes, we are sold.
It only takes five minutes to make healthy strawberry cream popsicles! So don’t wait, read the recipe below and try it out.
- 3 cups of frozen strawberries
- 1 1/2 cup coconut milk
- 2 teaspoons of fresh lemon juice
- 1 teaspoon vanilla extract
- 1 tablespoon of natural sweetener (such as pure maple syrup, raw honey, or stevia)
Take a food processor and mash the strawberries. Mix coconut milk, vanilla extract, sweetener and lemon juice. Make sure to pour a layer of strawberry puree in order and then a thin layer of coconut mixture into the popsicles. Do this until you are both exhausted. Fish by inserting the popsicles and freezing for at least four hours (although six is better). Enjoy!
