While this healthier pancake alternative is delicious, keep in mind that it is still high in calories. However, this recipe is a delicious way to satisfy your cravings by avoiding very unhealthy foods. To top it off, this recipe is super easy and quick to make!
- 1 1/2 cups all-purpose flour
- 2 teaspoons of yeast
- 2 tablespoons of sugar (optional, but you are welcome to replace it with a sweetener of your choice)
- 1/2 teaspoon of salt
- 2 tablespoons of oil
- 2 eggs
- 1 teaspoon vanilla
- 3/4 cup regular Greek yogurt (or Greek vanilla yogurt)
- 3/4 cup milk (any type of milk will work)
- Filling suggestions: syrup, powdered sugar, honey, fruit, chocolate chips, etc.
1- Preheat a pan or hot plate to 325 degrees (165 degrees Celsius) – medium heat.
2- In a bowl, whisk together the flour, baking powder, sugar and salt.
3- In another bowl, mix the oil, eggs, vanilla and Greek yogurt together.
4- While mixing, pour the dry ingredients into the wet ones.
5- Add milk until blended. Make sure you don’t mix too much.
6- Grease the skillet or pan and pour 1/4 to 1/3 cup batter into it.
7- Let the pancakes cook for about 2 minutes, until the edges look “dry” and bubbles form on the batter.
8- Flip the pancakes over with a thin spatula and cook for another minute or two.
9- Serve with all the toppings you love and enjoy!
